[:ca]Laurent Lemal va néixer al nord de França, a Lille, una zona que defineix com “completament diferent del sud”. Després d’estudiar cuina durant cinc anys a Tissu du l’île du Tuquet, al poc d’iniciar la seva carrera professional, va tenir l’oportunitat de treballar a diferents restaurants d’Alain Ducasse com La Celle. A Toulon va ser xef, per primera vegada, d’un bistrot més modern.

El 2009, Luc Richard i Karin Puringher, propietaris del Domaine Riberach de Béles, als Pirineus Orientals, li sedueixen amb el projecte de transformar l’antic celler en un wine hotel amb restaurant gastronòmic. Així, Lemal va participar en el disseny de la seva pròpia cuina i el restaurant es va obrir el 2011. Tres anys després, el 2014, va aconseguir l’estrella de la Guia Michelin i, aquest 2017, el Bocuse d’Or ha premiat un dels seus plats com el millor plat vegetal del concurs.

Laurent Lemal: “Treballar amb verdures i vegetals és la meva signatura”

Com defineix la seva cuina?
Busco per tot arreu de França. Busco que fan els xefs ara per internet. Treballo amb el meu instint. Podem canviar el menú dos cops al mes, si volem. Depèn del meu estat d’ànim. Per exemple, fem una carn calenta i la meva signatura és sempre un entrant amb gelat perquè per mi és molt important les diferents textures i temperatures del plat. Quan em pregunten quin és el meu plat preferit, sempre dic que no en tinc cap de preferit. Simplement explico qui sóc en cada plat.

D’on ve aquesta inquietud pel producte?
He treballat durant sis anys en els restaurants de l’Alain Ducasse on he estat sots xef. He treballat amb la filosofia d’Alain Ducasse que és agafar sempre els millors ingredients perquè, d’aquesta manera, ja tens molt de guanyat i no cal afegir-hi massa cosa. He mantingut aquesta filosofia però necessitava canviar i l’he adaptada a la meva manera perquè volia obrir la meva ment i saber com és la cuina a cada país. He treballat en diferents països europeus buscant una nova tècnica, una nova manera, una nova visió de la cuina perquè, quan som a França, parlem de cuina francesa i som així. De vegades, però, és important obrir-se i mirar arreu on trobes coses meravelloses. Per mi va ser un gran descobriment quan vaig estar a Espanya, Àustria, Alemanya, Suïssa… vaig trobar moltes tècniques diferents i, per a mi, és una bona forma de millorar.

Creu que els nous joves xefs francesos estan canviant aquesta perspectiva i estan oberts i preparats per fugir de la idea que existeix la cuina francesa, espanyola, alemanya…?
Sí, ara hem de parlar de cuina moderna perquè, per exemple, a França tenim una base per treballar, tenim le beurre blanche, le fumet poisson, etc, que no es troben en altres països i és típic de la cuina francesa. És important fer cuina francesa, però és també important obrir la ment a altres països perquè no ho sabem tot.

Tenim, potser, un problema amb les receptes originals que s’han perdut pel camí?
No. De vegades, al menú, tenim cuina clàssica però la fem amb una tècnica diferent. La fem més lleugera. Això és important perquè ara no utilitzem gaire greix o nata. Fem una cuina baixa en greixos.

Quina importància té el Bocuse d’Or en la carrera?
El Bocuse d’Or ens ha portat molts mitjans de comunicació. No s’espera que algú com jo pugui guanyar perquè vinc d’un lloc molt petit, amb poca gent i va ser una sorpresa.

La gent que venia per l’estrella Michelin ara també pot venir pel Bocuse d’Or?
Sí. Quan vaig guanyar el Bocuse d’Or a França, ho vam tenir ple durant quatre setmanes. L’impacte va ser molt superior que quan vam guanyar l’estrella Michelin.

I, ara, noteu algun canvi arreu d’aquest reconeixement?
Si, han trucat molts mitjans de comunicació. El meu plat va ser premiat com millor plat vegetal o de verdures i ha trucat molta gent per fer formació, també molts mitjans vegans i vegetarians.

És perillós que esdevingui un referent pels mitjans vegans i vegetarians o és una oportunitat?
Crec que és una qüestió de temps. Vaig començar a fer això ja fa cinc anys. Per mi, demostrar el que es pot fer amb la verdura i els vegetals és una oportunitat perquè és la meva signatura.

Quin és el seu proper objectiu?
Continuar en aquest restaurant amb la qualitat i potser poder obtenir la segona estrella Michelin. No és que sigui un objectiu però, la qualitat del restaurant ha augmentat molt en aquests cinc anys. Per mi és molt important mantenir el meu equip de cuina. He estat treballant amb el meu segon durant tres anys, gran part de l’equip porta aquí més de dos anys.

M’ha agradat molt l’Aràbica (postres amb cafè xocolata i taronja)…
A França és un sabor clàssic: taronges, xocolata i cafè. Crec que és una bona barreja i ho tastem amb diferents textures. Nosaltres no utilitzem massa la xocolata en els nostres plats. Triem verdures i fruita, maduixes i gerds, només locals.

En el context de la filosofia Km0, quin són els millors productes d’aquesta zona?
Estic treballant amb el Laurent Divel que fa safrà, també amb tomates, herbes aromàtiques, maduixes, gerds… Treballem amb Le Jardin de Perpignan, que són tretze cooperatives de diferents productors, sobretot de préssec, d’albercocs, d’espinacs… Ara estem utilitzant productes locals en un 90%. No utilitzem mantega. Ara tenim unes postres en les que utilitzem llet d’ovella de Mas Marcé de la província de Girona.

Laurent Lemal: “Trabajar con verduras y vegetales es mi firma”

¿Cómo define su cocina?
Busco en todas partes de Francia. Busco que hacen los chefs ahora por internet. Trabajo con mi instinto. Podemos cambiar el menú dos veces al mes, si queremos. Depende de mi estado de ánimo. Por ejemplo, hacemos una carne caliente y mi firma es siempre un entrante con helado porque para mí son muy importantes las diferentes texturas y temperaturas del plato. Cuando me preguntan cuál es mi plato preferido, siempre digo que no tengo ninguno preferido. Simplemente explico quién soy en cada plato.

¿De dónde viene esta inquietud por el producto?
He trabajado durante seis años en los restaurantes de Alain Ducasse donde he sido subchef. He trabajado con la filosofía de Alain Ducasse que es coger siempre los mejores ingredientes para que, de este modo, ya tienes mucho ganado y no hay que añadir mucho más. He mantenido esta filosofía pero necesitaba cambiar y lo he adaptado a mi manera porque quería abrir mi mente y saber cómo es la cocina en cada país. He trabajado en diferentes países europeos buscando una nueva técnica, una nueva manera, una nueva visión de la cocina para que, cuando estemos en Francia, hablemos de cocina francesa y somos así. A veces, sin embargo, es importante abrirse y mirar lugares donde encuentras cosas maravillosas. Para mí fue un gran descubrimiento cuando estuve en España, Austria, Alemania, Suiza … encontré muchas técnicas diferentes y, para mí, es una buena forma de mejorar.

Cree que los nuevos jóvenes chefs franceses están cambiando esta perspectiva y están abiertos y preparados para huir de la idea de que existe la cocina francesa, española, alemana …?
Sí, ahora tenemos que hablar de cocina moderna porque, por ejemplo, en Francia tenemos una base para trabajar, tenemos le beurre blanche, le fumet poisson, etc, que no se encuentran en otros países y es típico de la cocina francesa. Es importante hacer cocina francesa, pero es también importante abrir la mente a otros países porque no lo sabemos todo.

¿Tenemos, quizás, un problema con las recetas originales que se han perdido por el camino?
No. A veces, en el menú, tenemos cocina clásica pero la hacemos con una técnica diferente. La hacemos más ligera. Esto es importante porque ahora no utilizamos mucha grasa o nata. Hacemos una cocina baja en grasas.

¿Qué importancia tiene el Bocuse d’Or en su carrera?
El Bocuse d’Or nos ha traido a muchos medios de comunicación. No se espera que alguien como yo pueda ganar porque vengo de un lugar muy pequeño, con poca gente y fue una sorpresa.

¿La gente que venía por la estrella Michelin ahora también puede venir por el Bocuse d’Or?
Sí. Cuando gané el Bocuse de Oro en Francia, lo tuvimos lleno durante cuatro semanas. El impacto fue muy superior que cuando ganamos la estrella Michelin.

Y, ahora, ¿notáis algún cambio a partir de este reconocimiento?
Si, han llamado muchos medios de comunicación. Mi plato fue premiado como mejor plato vegetal o de verduras y ha llamado mucha gente para hacer formación, también muchos medios veganos y vegetarianos.

¿Es peligroso que se convierta en un referente para los medios veganos y vegetarianos o es una oportunidad?
Creo que es una cuestión de tiempo. Empecé a hacer esto ya hace cinco años. Para mí, demostrar lo que se puede hacer con la verdura y los vegetales es una oportunidad porque es mi firma.

¿Cuál es su próximo objetivo?
Continuar en este restaurante con la calidad y tal vez poder obtener la segunda estrella Michelin. No es que sea un objetivo pero, la calidad del restaurante ha aumentado mucho en estos cinco años. Para mí es muy importante mantener mi equipo de cocina. He estado trabajando con mi segundo durante tres años, gran parte del equipo lleva aquí más de dos años.

Me ha gustado mucho la Arábica (postre con café chocolate y naranja) …
En Francia es un sabor clásico: naranjas, chocolate y café. Creo que es una buena mezcla y lo probamos con diferentes texturas. Nosotros no utilizamos demasiado el chocolate en nuestros platos. Elegimos verduras y fruta, fresas y frambuesas, sólo locales.

En el contexto de la filosofía Km0, ¿cuáles son los mejores productos de esta zona?
Estoy trabajando con Laurent Divel respecto al azafrán, también con tomates, hierbas aromáticas, fresas, frambuesas … Trabajamos con Le Jardin de Perpignan, que son trece cooperativas de diferentes productores, sobre todo de melocotón, de albaricoques, de espinacas … Ahora estamos utilizando productos locales en un 90%. No utilizamos mantequilla. After studying cooking for five years in Tissu du l’île du Tuquet, shortly after starting his professional career, he had the opportunity to work in different restaurants of Alain Ducasse as La Celle. In Toulon he was the chef, for the first time, of a more modern bistro.

In 2009, Luc Richard and Karin Puringher, owners of the Domaine Riberach de Béles in the Pyrenees Orientales, seduced him with the project of transforming the old winery into a wine hotel with gastronomic restaurant. Thus, Lemal participated in the design of his own kitchen and the restaurant was opened in 2011. Three years later, in 2014, he got the star of the Michelin Guide and, this 2017, the Bocuse d’Or has awarded one of his dishes as the best vegetable dish of the contest.

Laurent Lemal: “Working with vegetables is my signature”

How do you define your kitchen?
I searched everywhere in France. I looked for what chefs do now on the internet. I work with my instinct. We can change the menu twice a month, if we want. It depends on my mood. For example, we make a hot meat and my signature is always an entrée with ice cream because for me the different textures and temperatures of the dish are very important. When they ask me what is my favorite dish, I always say that I have none of them. I simply explain who I am in each dish.

Where does this concern for the product come from?
I have worked for six years in the restaurants of Alain Ducasse where I have been subchef. I have worked with the philosophy of Alain Ducasse that is to pick always the best ingredients so that, in this way, you already have a lot and there is no more to add. I have maintained this philosophy but I needed to change and I have adapted it my way because I wanted to open my mind and to know how is the cuisine in each country. I have worked in different European countries looking for a new technique, a new way, a new vision of the kitchen so that, when we are in France, we talk about French cuisine and we are like this. Sometimes, though, it’s important to open up and look at places where you find wonderful things. For me it was a great discovery when I was in Spain, Austria, Germany, Switzerland … I found many different techniques and, for me, it is a good way to improve.

Do you think the new young French chefs are changing this perspective and are open and prepared to change the idea that there is French, Spanish, German cuisine …?
Yes, now we have to talk about modern cuisine because, for example, in France we have a base to work, we have le beurre blanche, le fumet poisson, etc., which are not found in other countries and it is typical of French cuisine. It is important to make French cuisine, but it is also important to open the mind to other countries because we do not know everything.

Do we have, perhaps, a problem with the original recipes that have been lost along the way?
No. Sometimes, on the menu, we have classic cuisine but we do it with a different technique. We make it lighter. This is important because now we do not use a lot of fat or cream. We make a low fat cooking.

How important is the Bocuse d’Or in your career?
The Bocuse d’Or has brought us to many media. It is not expected that someone like me can win because I come from a very small place, with few people and it was a surprise.

People who came by the Michelin star now can also come by the Bocuse d’Or?
Yes. When I won the Bocuse d’Or in France, we had it full for four weeks. The impact was much higher than when we won the Michelin star.

And, now, do you notice any change from this recognition?
Yes, many media have called. My dish was awarded as best vegetable dish and many people called to do training, also many vegan and vegetarian.

Is it dangerous that it becomes a benchmark for vegan and vegetarian media or is it an opportunity?
I think it’s a matter of time. I started doing this five years ago. For me, demonstrating what can be done with vegetables and vegetables is an opportunity because it is my signature.

What is your next goal?
Continue in this restaurant with the quality and maybe get the second Michelin star. That is not a target but the quality of the restaurant has increased a lot in these last five years. For me it is very important to keep my kitchen equipment. I have been working with my second for three years, much of the team has been here for over two years.

I really liked the Arabica (dessert with chocolate and orange coffee) …
In France it is a classic flavor: oranges, chocolate and coffee. I think it’s a good mix and we try it with different textures. We did not use too much chocolate on our plates. We chose vegetables and fruit, strawberries and raspberries, only local.

In the context of the Km0 philosophy, which are the best products in this area?
I am working with Laurent Divel regarding saffron, also with tomatoes, herbs, strawberries, raspberries … We work with Le Jardin de Perpignan, which are thirteen cooperatives of different producers, especially peaches, apricots, spinach … We are now using 90% of local products. We did not use butter. Now we have a dessert in which we use sheep’s milk from Mas Marcé in the province of Girona.[:]
