[:ca]Gevrey Chambertin és la localitat de la Borgonya, a la Côte d’Or, que concentra més Grands crus i Premiers crus d’aquesta prestigiosa zona vitivinícola. Bressol del Pinot Noir i referència dels vins negres de Borgonya elaborats 100% amb aquesta varietat, els productors del municipi celebren cada any Le Roi Chambertin, una trobada professional per tastar el centenar de vins de l’any, a la tarda, i, amb un sopar de germanor a la nit, degustar l’evolució d’aquests vins deu anys després.

Així, els 41 bodeguers agrupats al Syndicat Viticole de Gevrey Cambertin –amb el seu president Jean Michel Guillon al capdavant– van oferir els vins de l’anyada 2015, a l’Espai Chambertin, el dijous dia 17 de novembre. Uns vins amb nervi i bona acidesa que surten al mercat, la major part venuda, per guardar-se i envellir en ampolla durant almenys entre cinc i vuit anys. De fet, les anyades 2005 que es van poder degustar durant el sopar mostraven uns vins arrodonits i elegants.

Entre els vins del tast van destacar els Grands crus: Chambertin, Chambertin Clos de Bèze, Chapelle Chambertin, Charmes Chambertin, Mazis Chambertin, Griotte Chambertin, Latricières Chambertin, Ruchottes Chambertin i Mazoyères Chambertin; així com els Premiers crus: La Bossière, La Romanée, Poissenot, Estournelles Saint Jacques, Clos des Varoilles, Lavaux Saint Jacques, Les Cazetiers, Clos du Chapitre, Clos Saint Jacques, Champeaux, Petits Cazetiers, Combe aux Moines, Les Goulots, Aux Combottes, Bel Air, Cherbaude, Petite Chapelle, En Ergot, Clos Prieur, La Perrière, Au Closeau, Issarts, Les Corbeaux, Craipillot, Fonteny i Champonnet.

Constatem com en poques parts del món es pot entendre el concepte “cru” d’una manera tan clara com en aquesta denominació d’origen. Tastem vins de Clair Bruno, Pierre Damoy o Pierre Gelin procedents de les mítiques vinyes de Chambertin Clos de Bèze, i en els tres reconeixem un terrer diferenciat amb un resultat de fruita madura i un fort record a pa de figues. Les coincidències es repeteixen en tastar els Charmes Chambertin de Bernard Bouvier, Philippe Charlopin, Dominique Gallois, Freres Humbert, o Pierre Naigeon, entre altres. I així, en els diferents crus de la localitat. La Champagne va ser la denominació convidada aquest any i el públic professional també va tastar aquests escumosos de Gobillard, Agrapart & Fils, Selosse i Marie Courtin.

Al sopar, vam compartir taula amb els bodeguers Bernard Bouvier i Jerome Galeyrand que aportaren els seus vins del 2005, entre altres. Al matí, havíem visitat els dos cellers. René Bouvier compta amb 17 hectàrees de vinya certificada com ecològica des de la collita 2013, a Marsannay Gevrey-Chambertin. Amb parcel·les Grand Cru, Premir Cru i “de Village”, entre els seus vins destaquen els de vinyes velles i es tracta d’un celler ric en referències amb una completa família de vins.

Pel que fa a Jerôme Galeyrand, amb cinc hectàrees de vinya, produeix unes 25.000 ampolles de vi de diferents denominacions de la Côte de Nuits que, juntament amb Beaune, configura la Côte d’Or. El 70% de la seva vinya és ecològica i destaca la recerca amb vins naturals sense sulfits, així com l’aplicació de principis biodinàmics. Jerôme només fa 14 anys que elabora vi, però ha arribat a l’ofici amb una maduresa que es tradueix amb vins molt treballats.

Cuna del Pinot Noir y referencia de los vinos tintos de Borgoña elaborados 100% con esta variedad, los productores del municipio celebran cada año Le Roi Chambertin, un encuentro profesional para probar el centenar de vinos del año, por la tarde, y, con una cena de hermandad en la noche, degustar la evolución de estos vinos diez años después.

Así, los 41 bodegueros agrupados Syndicat Viticole de Gevrey Cambert -con su presidente Jean Michel Guillon a la cabeza- ofrecieron los vinos de la añada 2015, en el Espacio Chambertin, el jueves día 17 de noviembre. Unos vinos con nervio y buena acidez que salen al mercado, la mayor parte vendida, para guardarse y envejecer en botella durante al menos entre cinco y ocho años. De hecho, las añadas 2005 que se pudieron degustar durante la cena mostraban unos vinos redondeados y elegantes.

Entre los vinos de la cata destacaron los Grandes crudos: Chambertin, Chambertin Clos de Bèze, Chapelle Chambertin, Charmes Chambertin, Mazis Chambertin, Griotte Chambertin, Latricières Chambertin, Ruchottes Chambertin y Mazoyer Chambertin; así como los Premiers crudos: La Bossière, La Romanée, Poissenot, Estournelles Saint Jacques, Clos des Varoilles, Lavaux Saint Jacques, Las Cazetiers, Clos du Chapitre, Clos Saint Jacques, Champeaux, Pequeños Cazetiers, Combe aux Moines, Las Goulots, Aux Combottes, Bel Air, Cherbaude, Petite Chapelle, En Ergot, Clos Prieur, La Perrière, Au Closeau, Issarts, Las Corbeaux, Craipillot, Fonteny y Champonnet.

Constatamos como en pocas partes del mundo se puede entender el concepto “crudo” de una manera tan clara como en esta denominación de origen. Probamos vinos de Clair Bruno, Pierre Damoy o Pierre Gelin procedentes de los míticos viñedos de Chambertin Clos de Bèze, y en los tres reconocemos un terruño diferenciado con un resultado de fruta madura y un fuerte recuerdo a pan de higos. Las coincidencias se repiten en probar los Charmes Chambertin de Bernard Bouvier, Philippe Charlopin, Dominique Gallois, Freres Humbert, o Pierre Naigeon, entre otros. Y así, en los diferentes crudos de la localidad.

La Champagne fue la denominación invitada este año y el público profesional también probó estos espumosos de Gobillard, Agrapart & Fils, Selosse y Marie Courtin.
En la cena, compartimos mesa con los bodegueros Bernard Bouvier y Jerome Galeyrand que aportaron sus vinos de 2005, entre otros. Por la mañana, habíamos visitado los dos bodegas. René Bouvier cuenta con 17 hectáreas de viñedo certificada como ecológica desde la cosecha 2013, en Marsannay Gevrey-Chambertin. Con parcelas Grand Cru, premios Crudo y “de Village”, entre sus vinos destacan los de viñas viejas y se trata de una bodega rica en referencias con una completa familia de vinos.

En cuanto a Jerôme Galeyrand, con cinco hectáreas de viña, produce unas 25.000 botellas de vino de diferentes denominaciones de la Côte de Nuits que, junto con Beaune, configura la Côte d’Or. El 70% de su viña es ecológica y destaca la investigación con vinos naturales sin sulfitos, así como la aplicación de principios biodinámicos. Jerôme sólo hace 14 años que elabora vino, pero ha llegado al oficio con una madurez que se traduce con vinos muy trabajados.

[:en]Gevrey Chambertin is the town of Burgundy, on the Côte d’Or, which concentrates more Grand crudes and raw Premiers of this prestigious wine-growing area. Among the wines of the tasting were the Great Crudes: Chambertin, Chambertin Clos de Bèze, Chapelle Chambertin, Charmes Chambertin, Mazis Chambertin, Griotte Chambertin, Latricières Chambertin, Ruchottes Chambertin and Mazoyer Chambertin; As well as the Crude Premiers: La Bossière, La Romanée, Poissenot, Estournelles Saint Jacques, Clos des Varoilles, Lavaux Saint Jacques, The Cazetiers, Clos du Chapitre, Clos Saint Jacques, Champeaux, Small Cazetiers, Combe aux Moines, Las Goulots, Aux Combottes, Bel Air, Cherbaude, Petite Chapelle, Ergot, Clos Prieur, La Perrière, Au Closeau, Issarts, Corbeaux, Craipillot, Fonteny and Champonnet.
We can see how in a few parts of the world the concept “crude” can be understood as clearly as in this appellation of origin. We sample wines from Clair Bruno, Pierre Damoy or Pierre Gelin from the legendary vineyards of Chambertin Clos de Bèze, and in the three we recognize a differentiated terroir with a result of ripe fruit and a strong souvenir of fig bread. The coincidences are repeated in testing the Charmes Chambertin of Bernard Bouvier, Philippe Charlopin, Dominique Gallois, Freres Humbert, or Pierre Naigeon, among others.
